Menu Monday

Well, it isn't a whole menu...just another new recipe. There wasn't a day of the week that went with recipe...oh well!
I'm taking this recipe to cooking club tonight. I have already given it a taste test and it is delicious! A must try and perfect for the summer!

Tomato Mozzarella Salad
15 Roma tomatoes
1 1/2 pounds fresh mozzarella cheese balls
1/3 cup slivered basil leaves
1/4 cup chopped flat-leaf Italian parsley
Italian Dressing (see next recipe)

Cut the tomatoes into quarters and cut each quarter into 3 pieces. Cut each mozzarella cheese ball into quarters. Combine the tomatoes, cheese, basil and parsley in a bowl and mix gently.
Add the Italian Dressing to the tomato mixture and toss to coat well. Chill, covered, until serving time. Toss again before serving.

Italian Dressing
1/4 cup olive oil
1/3 cup red wine vinegar
1 tablespoon balsamic vinegar
2 teaspoons granulated garlic
1 tablespoon kosher salt
1 tablespoon mixed ground red, white, and black peppercorns

Combine the olive oil, wine vinegar, balsamic vinegar, garlic salt and pepper mixture in a small bowl and whisk until smooth.
